I cooked some country style ribs in my 055 Sunday. They usually take about 2 1/2 hours this time they took 6 hours. They came out excellent with bark that I don't normally get, but sure made for a late dinner.

I couldn't figure why it was taking so long then it dawned on me in the middle of the night. Before I had kept them separated this time I bought the biggest package they had. I scrunched them all together. It was like cooking a whole Boston but only half as thick.

I guess I always have to learn the hard way.
