I had a similarly frustrating experience. I couldn't believe they were not interested in my business. Anyway, I finally found 2 independent agents willing to work with me and I'm insured with A-Rated Scottsdale Insurance Co. The quote based on $200K sales estimate and $1 million coverage was approx $900 per year. This is adjusted at the end of 12 months based on your actual sales. The same agent gave me a quote with a C-Rated insurer for more that $2000. So get as many quotes as possible since many insurers don't want this business so they price themselves out of the market on purpose.
That sounds pretty good...$1000 annually for $500,000 coverage... but the main question is this:

Does $500,000 cover the cost of your home, cars
and business?

If so then I think it does, but your insurance agent can really address this question. That is his/her job...

Essentially, you should have enough to cover your property in case you get a judgement against you, cause the lawyers will go after everything you own. You may not lose your house but you may incur a lien against it. If you have adequate insurance, most lawyers will typically either settle out of court and judges will usually award settlements for the insured amounts unless there is severe disability or death (caused by whatever) if found liable.

Best bet is talk to your agent, if they are worth anything they will have the answers for you.

I'm sorry I haven't responded sooner. We got a policy with TAPCO for $1,000 approximately per year through our Allstate agent. I think Allstate won't touch you in Florida with any type of commercial policy. We did get our commercial coverage through them for the truck and trailer. But the liability insurance they farmed us out. We also have TAPCO for our homeowners, as Allstate cancelled us a couple years after Hurricane Andrew hit Miami.

Once upon a time a HAM SANDWICH was sued for not having enough mustard on it.

I had a wedding reception hall for small events up to 75 people as part of a full service wedding business. My agent suggested 1 million as a minimum. Seven years ago I paid $2250 a year for that coverage.
