Can anybody tell me if a 425 watt inverter is going to be enough to run my FEC100 for the duration of a competition?

You will pull about 250 watts when the smoker is starting up, but after the hot rod goes off it will drop to around 20 watts. You should be fine with that one.
Will you be running it full time on the inverter or is this emergency backup? You need to consider battery capacity also.
Duration is more a function of the size (amp-hours)of the battery or batteries you use. Basically the FEC100 pulls very little power after startup like 0.25-0.5 Amps so generally you could run one FE for quite some time on one deep cycle battery...
I am planning to run the FE for the entire comp on the battery/inverter set up. Probably somewhere in the 14-16 hour range.....

you really need to know the "amp-hours" rating of your battery...
CCA is more for short bursts starting a car or boat etc. make sure what you have is a "storage" type battery rather than a "starting" type battery...

I use the very same battery. We have a charger on it the whole time as we use it for our winch motor. FEC runs for at least 18 hours. You should have plenty of power. OH, almost forgot, we run our PG500 of the same system at the same time.
