Are there any suggestions for easy leveling the FE100 on grass/gravel/uneven surfaces encountered at competition settings? We really struggled last weekend.

Carry a 4 X 4 of plywood.or just a couple of thin strips of plywood.
We have soft sand in some sites in Fl,and it is handy.
You might also want to pick up a pack of wood shims from Home Depot and carry those along. While the piece of plywood helps, it sometimes need a little extra help.
Try the wood shims that john talked about, they work for me.

I've got a whole bunch of shims Joe. I can bring them to Dubuque for you... I just leave mine in the FE when I transport and they get pretty nasty, but they are effective.
