I just purchased an sm025 and while i waited for it to get here i found this forum and thanks to all of the posts and especially the archives, it made it almost TOO easy. Everything that happened was explained in the archives. From the GFCI to the way the wood burned during seasoning and the temperature peaks and valleys. You folks made it possible to relax and not stress over any issues. And by the way 2 slabs of baby backs rubbed and smoked with 2oz of applewood for 3 hrs and 45 minutes were perfect and got the seal of approval from my 8 year old rib expert, who gave them an emphatic, "dad, these ribs rock!" Again I cant thank everyone enough and it's pork butt this weekend coming up!

Congrats!!!

We have been taught by our mentor SmokinOkie to make some of the BEST Que ya will ever eat in your life right out of that there CS. We have also been taught that it is good to share a little que knowledge and have some fun while doing it. The BIGGEST thing that we have been taught is to take good notes and change one thing at a time tell ya get the Que you love.

Dang he is always right, but anyway, have a little FUN!
