Congrats on your first success.

Might I suggest, if you want something different than a butt, try ribs, chicken or turkey (much shorter cook times) first. This will help build your experience and confidence.

I am not trying to discourage you from a trying a brisket, but I will tell you that a brisket is singularly the most difficult meat to cook and get it right. The margin between under done, done perfect and over done is very narrow. Briskets have probably ruined the overall score for more competition teams than any other meat. Frowner

THOSE ARE HOOKS TO HANG RIBS ON AND THEY WORK REAL WELL. I HANG MY RIBS AND COOK AT 225 FOR 5 OR 6 HOURS THEN PUT MY SUPER SAUCE ON THEM AND REMOVE HOOKS AND WRAP IN ALUMINUM FOIL AND TURN THE TEMP DOWN TO ABOUT 190 AND LEAVE FOR 2 MORE HOURS. THEY TURN OUT REAL GREAT. I HAVE FOUND THAT FAMOUS DAVE'S RIB RUB WORKS REAL WELL.
Thanks for all the continued comments that rolled in. I was out of town part of the week, and didn't keep up with thread.

I'm going to try ribs next, although a brisket is in the near future. I have not made my shopping run yet, but I hope to start the ribs in the AM.
