Currently, a bullet (Meco) water smoker user. Ready to upgrade to Cookshack smoker but I am unsure whether to go bigger for the Model 50 or smaller for the Smokette. Seems like the additional capacity of the 50 would be great (when needed) but I understand Cookshack advises a minimum of 15 lbs of meat when the use this model for optimal performance. Is this absolutely necessary??

Most times I'd be cooking a lesser amount (especially when smoking fish)--but I would like the versatility to crank the rib count when we invite lots of folks over. Any input from veteran Shack users would be much appreciated.

I have a 55 and am very happy with it. Lotta space for my average cooks. It's nice not to have to worry often about over-filling a rack or trying to fit meats in like a jig saw puzzle. As far as minimum load size, I don't think you have to worry. Just did a 3# tri tip roast for dinner. Turned out pretty darn good. Many of my cooks so far have been with smaller loads (a turkey breast here, slab of baby backs there, etc...). I think you'll find that with the ease of a cookshack, you're gonna be more inclined to smoke foods spontaneously so, often loads will be small. At least that's my experience so far. As for comparison w/smokette, never owned one so couldn't give you an opinion.

I have my Model 50 full of 5 kinds of peppers right now. All racks are in use. This will yield very little, but the size enabled me to get them all in there at once, and thus save on electricity which is 18 cents per KWH here.

Plus, there is more hanging room for sausage, a turkey, fish, whatever. Razzer
