Well...I helped a team all weekend at the OC BBQ and Music festival to bennifet Kristies Foundation. 71 teams and our team took 1st in pork and 9th in brisket. It was an amazing weekend and Rib Tickler BBq was very kind to let my wife and I join in to help. I learned so much. I quickly realized that everything I knew was from you all and my testing at home, and to actually watch one of the best in our neck of the woods was like being in a cooking class. The FEC500 is an amazing machine. The bbq looks great and tastes even better out of a pellet smoker. I want one!!! At the very least, my experiences this weekend showed me that I can cater bbq. We served over 1600 people in 2 days. I am exhausted and thrilled to have been involved with this event.

Thanks everyone! I was just the bbq bitch all weekend so not sure how much credit I can take. And actually first was in pork. I guess ribs is a seperate category? We didn't do as well in Ribs and Chicken. Which really surprised me, because the chicken was amazing. I think we got a bad table, at least the scores were all over from 9's to 4's.
I certainly was interested in the competition aspect, but what I enjoyed the most was learning how to cook and feed the masses. I just loved temping the meets and listening to the oohs and ahhs from the crowd passing by. My head is swirling with ideas for catering. Been reading the forums all morning about raw meat to serving ratios, and then I found the spreadsheet. OMG that was an awesome find.
CONGRATS Padre'! I would like to try being on the cooking side one day instead of the judging side of a comp.

Speaking of judging: scores ranged from "9" to "4"? Are you sure someone didn't read a "9" as a "4"? A Table Captain should have made the judge support giving a "4" to a competitor, especially if there were some "9"s for your turn-in at the table.

Anyway...when did you say you were ordering that FEC100? Big Grin
Since this was my first competition and I was just trying to be a silent spectator, I didn't ask too many questions about the competition. I really saved my questions for food and prep. I could tell there was some hurt feelings about the scores so I didn't press. I was really happy for them about the 1st in pork and the call in Brisket. They had a good shot at GC except the funny marks in ribs and chicken. I couldn't find the results posted yet, but I remember Left Coast won Grand champion and got 3 calls. Anyways, I was thrilled for Rib Tickler. Larry was great and the whole team welcomed us like family.
