Age 57....Kansas City raised with Que in my blood from eating at Arthur Bryant's as a boy.

Strongly considering getting into a Mobil catering Bar B Que Cabin and starting a small business here in St. Pete Florida....KC Style of course! Need advice on the business side of things......health dept rules, outdoor cooking regulations, event cooking, where is the money made? Got to convince my wife about this business.

ok just a few things since we haven't been at it that long.
1- go for your mobile food dispencing rating. costs 350/yr and you will be inspected 4 times. advantage over catering designation is you can cook anywhere,anything at any time.
2-before you buy anything get the plans approved 1st. this costs 150 one time
3-be aware that florida requires all smokers to be enclosed by screening at least.
4- for agency contact the florida dept of business and professional regulations
5- you will need a comissary kitchen for grey water dump and potable water even if you do get the mfd designation
6- for fun in this thread look up "took the plunge friday" and "trailer tech delievery delays" this will give you an idea of what fun ordering a trailer for deleviry in florida can be with 4 hurricanes. but i still can say i was very happy with trailer tech.
7- i can really highly recommend cookshack. we have both the fec100 and sm150 in our rig (for pics see "2 greyhound rig pics we hope" in this thread). cookshack extended our warranty when we explained the delay on delievery due to the hurricanes!!!!!!!
8- i know i left something out but this is the best top of the head stuff i got.

ps. we drove to anderson indiana to look at the southern yankee rig. it is well made. the owner used to be an engineer at gm. but to be brutally honest it was past our start up budget and now i am glad of it lol

I apologize for the redundancy but use the site to get the info for the application and plan review. This stuff will give you an idea of what you're going to need.

I've seen Jack's trailer (Plant City/KCBS) last November - it's really nice and I listen when he talks about what he'd change, delete, or what he likes about his rig.
