Drove ofver to the next town and picked up my new smoker rather than waiting on it to arrive. It is in the break in processs as I wirte this. Bought a whole center loin at Sam's this weekend and had it cut into 1-1/4" thick bone in chops. Those will be my first smoke tonight. I have them brining in Okie's brine receipe but will only be able to brine them for about 4 hours. Is that long enough to do any good?.. Also have the Cookshack glaze on the stove now
