Drove ofver to the next town and picked up my new smoker rather than waiting on it to arrive. It is in the break in processs as I wirte this. Bought a whole center loin at Sam's this weekend and had it cut into 1-1/4" thick bone in chops. Those will be my first smoke tonight. I have them brining in Okie's brine receipe but will only be able to brine them for about 4 hours. Is that long enough to do any good?.. Also have the Cookshack glaze on the stove now

Just finished the chops cooked on the CS Smoker. Cooked @ 250 for 1 hr. The meat temp was at 153. I shut it off there and let the meat rest in the smoker for another 20 minutes. It was tender, very moist and had just enough smoke flavor. Excellent table fare!!! I think I am going to like this new toy! I took off work today to play with it. Will hate to go back tomorrow. Baby back ribs this weekend YumYum!!! cant wait
