Last week I ordered an 08 from the website, but then found a local distributor. Being impatient I bought the smokette locally and cancelled the internet order (thank you Nancy) this past weekend, after seasoning the smoker, I did a test run on a 16lbs turkey. I started cooking at 10:30 pm the turkey was ready at 6:30 am. sooner than I thought. So Saturday we had turkey sandwiches for lunch. The turkey, a kosher bird, was moist and delicious. What amazes me was the amount of wood required. I used 2 small chunks of apple and 1 of maple. Next time for thanksgiving I will go with two chunks. I also own two chargrillers that I use extensively and I burn through serious amounts both quantity and dollars of logs smoking my meats. So this thing really pays for itself in the amount of wood you use. My only regret is not getting a larger model. I know already that the 08 is too small for my needs. Oh well. Next time. Look forward to getting to know you people.
