I just received my new 008 and can't wait to fire it up. I have a brisket for my first trial but it's thin, about 5 pounds. How long do I cook it at 225 degrees. The cook book says 12 hours for an 8-10 pounder. I'm afraid this would cook it up! Should I use an internal meat thermometer? (I can get one with a wire that would feed down the vent.) What temp do I cook it to?
