I have just obtained my first Cookshack smoker and studying the manual and reading some of the forum posts I believe I have a bit of a learning curve to ascend!
I plan to smoke some quail. I don't see any recipes for quail on the forum. I would like any suggestions about proceeding to smoke quail- temp time etc. I will do perhaps 15 or 20 small birds about 4-5 oz each.

Welcome. I think Smokin found everything you will need. There was a bunch of good info in that find.

Just from my experience and research on chicken, I would definitely butterfly them and brine them, but it won't take long in the brine. Chicken takes on a lot of smoke, so be careful, I did over smoke the bird the first time around.
