tomorrow i'll be firing up a CS M008 for my first go round and plan on smoking 3 racks of pork ribs with some hickory and pecan and have a couple questions so it doesn't turn into a disaster.
first, it says use about 2oz of wood per 10lbs of meat...is this a simple multiplication factor as the weight goes up or is it a bit more exponential? ie. 30 lbs would necessitate 6oz of wood or should i stay lower with 4-5oz?
secondly, how should i approach smoking 3 racks so that they'll all cook evenly. i'd assume the rack on the lowest rack would cook a bit faster than those up high; should i rotate them halfway through? additionally, can i still plan on ~4 hours for 3 racks or is the time necessitated going to increase as the number of racks increase?
