Got my 55 2 days ago. Must say I was shocked at the size it seems much smaller than I thought. I had planed to smoke 2 briskets (about 10 lb each) for some Californians who have never had it. I'm not sure I can get them in there much less have enough time to smoke'm. Any Ideas? I would hate to have to grill a Tri-Tip or Tri-Tough as I call them. (No one out here seems to know what cut that is)

10lbers will fit in there fine, just go corner to corner and put them not on the lowest rack and not on the top rack.

I'm curious, about your statement "...much less have enough time to smoke'm" The smoker isn't going to make it go faster, smoking is about low and slow. You need to give it enough time and not rush it.

When are you trying to serve these? You need to plan on 1.5 hours per pound MAX but they could be done as soon as 1 hour per pound.

You can double wrap them in foil when finished and hold them for hours and they'll be fine.

Read the 101 mentioned and ask away any questions.

Not sure I'd try to impress my friends if I've never cooked something, but you'll figure something out.

I have smoked two 15 lb turkeys at one time in my model 55 and the overall time was less than 30 minutes difference than when I smoked one turkey. I don't think you will find any difference in time cooking two over one - they will fit, tuck in the tails and if they want to unfold, use butchers string and tie it up. Wink
