I got my smoker a week ago. I sealed my deck, got a grill mat, unboxed my very lovely smokette and have it covered on my deck read to use. I know I need to season it and then smoke a butt but I am not sure about how to go about this. It is raining today so I am not sure if I can season it in the rain. SO, my questions are 1) How do I go about seasoning it ( should I make the wood chunks smaller) 2) do I install the racks before I do inital seasoning? 3) Do I put a pan of water in the smoker when seasoning? 4) Do I cover the smoke box and line the bottom of the smoker with foil NOW or when I do each smoke?

I am soo excited about finally getting to use this smoker but I am kinda scared I am going to ruin it!!! Is the door supposed to be hard to close? Once I get the hang of this my neighbors better watch out as they are going to be seeing a lot more of ME!! hehehehehehe

ltc -- Yes, you can season it in the rain. Might want to make a rig to cover the thermostat (electronics) which is simple. If it's not blowing simply use an umberlla. The rest of the unit is ok Smiler Shoot! you could even tape a zip-loc bag or plastic wrap over the dial.

No need to install racks unless you have the urge to wash them! Big Grin

No, you will never need to add a water pan to your smoker.

The door is supposed to be tough. It will give a little with use but it will always feel like closing the door on a tank!

You are not going to ruin the Smokette.

For the first seasoning, take out the racks and shelves, put 2 or 3 of the wood chunks in the woodbox, slide it all the way back. Close the door, turn it on about 225, let it smoke for about 6 hours. That's it.

No, do not put a pan of water in it.

No, you do not need to use foil until you are actually cooking something.

Yes, the door should be pretty stiff. It will get better as you use it.

Don't season in the rain. I seasoned mine by putting one piece of wood in the box. Rails were in the smoker. I also added an aluminum pan with about at inch of water and I put a cheap piece of pork steak of the top rack. I seasoned mine at 230 degrees for about 4 hours. I did not have foil on the box or floor of the smoker, but the aluminum pan caught the drippings from the pork. Good luck and great Q.
