Well! Smoked mullet in the model 55 yesterday. Mullet came out wonderfull and cleaned the cookshack out as per instructed and dishwashed the racks and rack holders. Today, when checking my cleaning efforts and replacing the racks the fish odor caused me to step back.

I don't know if a pan of baking soda left in it with the door closed or if it will take something else to get ride of the odor. I sure don't want this odor to cross over into a pork or beef cooking.

Yes! Put it though the dishwasher with the racks. I left the door open all night, stored out in the utility room - today it is much better. I think I can now smoke again without cross flavoring the chickens. Made dip with the smoked mullet and it is the best we have made, plenty of smoke, but not bitter.
