I tried to smoke many various small diameter casing sausages in my cookshack with many disappointing results. I find the cookshack great for larger diameter sausages and always had good results.
Anybody else have the same experience.

Well joe,
I have had some stumbles with color a time or 2, and dont really know why. but the texture and taste were always spot on.
I have also turned out some really nice looking stuff from 22-24mm cologen to natural hog casings.
Maybe its in the method......

I have a feeling that the problem may be in the high moisture content in the smoker. I have no problem with the texture or taste either. I believe there may be a limit to keeping the door open during the smoking process.
