RubM -- If by some chance you do not like the Cookshack, remember they have a "money back guarantee." I know of no one who has taken them up on it but it may have happened.

Seeing that you are "way up north," You might want to check out the website of our good friend, MainelyDave. He provides an excellent photo-journalistic comentary on using his CS up in the cold country of Maine.

I bought the 55 for similar reasons. Owned it three months and very happy. Now I spend more time thinking of how to prep to my taste, rather than worrying about the cook itself. Get a good thermometer and you will be good.
RubM... I searched and searched and finally decided to get a cookshack, then happened on a used one nearly 200 miles from me. Yes...I bought it.

Its a 50, and its also 20 years old. If anyone reading these posts is on the fence about getting any cookshack - then jump onto the greener side with the rest of us. Have no worries as I've found out that even this old girl still out performs and impresses everyone that samples her goodies! Not to mention that the folks at cookshack are right on with helping out with any questions. Enjoy!
You all have been great in helping with this decision. Yesterday, I gave in and ordered the Amerique. I have corresponded with Cookshack and learned that they do business the way I do business. (I am a photo retailer and sell Canon digital cameras) They are honest and back the customer and product from beginning to end. They are attentive, responsive and a pleasure to deal with. It is great to enter a purchase with this sense of comfort.

Thanks for buying. Jump in and read, there's lot of good info here.

By the way, I've been using Canon since 1971 and currently have a D20 (yeah, so OLD)...
