We passed! I sent in the renewal with a BIG check for the state license renewal. It said to schedule an inspection. I did that. Turns out we have to have 3 inspections per year instead of only one. We got the last one of the year done just in time! God does look after small children and fools!
We got to meet Reynaldo. He turned out to be very nice in person and very informative. It's good to pick the brains of the inspectors. I think it makes them feel good that you ask questions, too.
He told us that the state has passed 135 degrees minimum as a holding temperature. I always thought it was 140 plus. So that is new info!

Congrats, now on to the stress of daily operations....glad that he (Reynaldo) was not as much of a monster that he started out being....wow, 3 a year, here, in Lovely NE OH 1 time a year....but god knows how the inspection will go once I get the trailer ordered......thanks again for all the help.....happy smokin to ya!
Washington state is weird with holding temps. The old danger zone was 45f to 140f now it's 41f to 140f as of May 1st. No 45 is not a typo. They also changed reheat to 165 from one hour to two hours.

The good news is that we can get an annual temp vending permit for $255 that is good for 3 days a week in the same location, good all year. Used to cost $255 for 3 weeks for a temp vending permit.
i think they like to change the correct answers just to see if everyone keeps up with the bulletins.
under no circumstances would i ever run a steam line less than 145f since i just have this strange feeling that bacteria still likes the 41-140 range and the state be darned!!!!
this much i do know our inspectors love the fact that the sm150 goes to a 141 hold temp automatically and they really loved that!!!
also for those getting inspected they loved my log book and were taken aback that i had taylor remote thermos in the reefer and freezer.
we scored 100 out of 100 and the comment sheet suggested that we simply make a written document of procedure that every time the rig is left we automatically wash our hands and don gloves.

don gloves
remove gloves when handling money
if you leave the trailer while wearing gloves, you must wash the handle with sanitizing solution or you'll be leaving germs on the handle! LOL
Maybe we should wear masks while serving. We'll look like robbers.
