Did beef ribs this weekend FEC100 rubbed with CS brisket, smoked 224 for 6hrs with pecan. They were nice and juicy mostly fall off the bone but ill stick with my spares next time.
Try it sometime with short ribs. Some supermarket may put chuck short ribs on sale. Just go in and ask the butcher if they will sell you the short ribs uncut. It is also called the plate ribs if I remember correctly. This is the cut that Adam Perry Smith uses to make his beef ribs at Daisy Mae's in NYC and they are outstanding.
Well, there will still be fat on them but more meat though. Short ribs come from the chuck portion of the cow so there is definitely fat involved.
Sometime in the next couple of weeks, I will be smoking some beef ribs to get ready for a cooking class in April. Will take pics and post how they turn out.
