I have definitely decided Cookshack is the smoker to buy, Mostly due to this forum, it's outrageously incredible. My big question is how many smokers should I buy? Sound strange? Please bear with me and hopefully I can provoke a good forum.

What is the advantage in buying a model 50 Vs buying two model 08s'?

I know I'm going to need more space than the 08 provides ( I'm going to be cooking for groups of 25). The cost seems to be the same and i can only think of advantages in have to smaller smokers Vs one larger, but maybe I'm missing something experts know.

With each model, are the shelves adjustable? And can extra shelves be added to a maximum number of what?

If I load them to capacity can I get more cooked with two 08s' or one 50?

Is there such problems with overloading a smoker?

I completely appreciate any thoughts or suggestions everybody can give. Mahalo.

You are correct in that you can fit more into two model 08s than a model 50. According to the specs, the model 50 only holds 50% more than an 08. That said, one of the main advantage of the 50 other than just using 1 oven is its ability to allow you hang ribs and sausage in it. Due to the 08s size you really cannot hang anything in it, you need to lay them on the racks.

Also, overloading a cookshack may result in to much moisture in the oven. You may need to open the door a couple of times to let the moisture escape to get the desired results.

The problem with to much moisture is that it has an affect on the bark bein produced due to the higher moisture content. How much is too much depends upon what is being smoked and the desired results.

AS far as extra shelves go, you would need to fabricate a shelf holder for the extra shelves. If you are cooking brisket and pork butt, the standard spacing are fairly tight. Also, you do not want to get too close to the heating element or the meat may dry out.
well, 2 008's will take up more space than the 50. Two boxes to clean... 2 wood boxes to clean... 2 drip pans to clean... 2 boxes to remember to plug in... etc. no room to mount added shelves... tight as it is. In fact, I try to avoid using the bottom rack of my 008... too close to the heat. you can get a lot into an 008... plenty in one 50. but smoking chicken chunks? most of the time? You can get a good 4, 8-lb pork butts in an 008... and that much pulled pork will feed 20-30 easy. same for brisket. frankly, I prefer chickens on the weber kettle... you won't get crispy skin in the cookshack. if you're doing boneless, skinless, it should be good, though.
