My experience is that an adult given a standard grocery store hamburger bun will serve themself about 5 ounces on average. One way to cut back on the amount is to buy the 'party-size' small buns. Most people will put two on their plate but will be hard-pressed to get two ounces on each. High School athletes I would consider have someone serve them a measured amount.
I used to cook for Ducks Unlimited, GCA, mobile home manufactures, drilling rigs, etc. We finally learned the hard way, have servers make the sadwiches and hand it to them, same thing with your beans, salad etc. If not they will see how much the plate will hold.
