Reverse hold? | Cookshack

Not sure if that's what it's called. But let me explain.

Lets say you have a brisket that you want to start out at 180 degrees and you want to put it in at midnight. At 3am you want the temp to go up to 225 degrees. My unit has a hold feature. Can I set the hold feature to 225 after 3 hours of cooking at 180? According to my manual it sais the hold will stay at your hold temperature until you shut off the unit. So in theory my 225 could be my hold temp. Right?

From what I've read in the instruction manual, it appears that you can do this.

Some comp cooks do this on the FEC, sleep is priceless.

Makes sense to me Padre. That way you can add more smoke flavoring then kick it up to your desired cook temp. I do that manually all the time since the Elite doesn't have the "hold" feature.

FYI: This works on the Fast Eddie smokers, not the Cookshack electrics. At least not on my Amerique, love this feature on my FEC100.
