How do you put in the rib hooks? Due you use two hooks per slab? If you supposedly cook the ribs to where the meat falls off the bones, don't the ribs fall off the hooks?

Also I have seen some receipts that say to add charcoal in with the wood is that OK to do? And why would you do this?

You place the hook (1 hook per) into the rack of ribs about 2 ribs down from the top. This will give a good hold and they won't fall apart even when tender. I have a model 50 so with this method I can hang whole racks. Smokette users need to cut the racks of ribs in half.

The charcoal will help produce a smoke ring in the meat. It is for appearance more than flavor.
