best place to start is your city authorities and coordinate that with local county requirements.
here in st augustine you are required to;
1- be in a properly zoned location
2-skirting must be in place
3-potable water and grey water must be addressed
4-you must have access to sanitary facilities.

st johns county has similar requirements

i guess you could get around a lot of this by pulling a special event permit but they are expensive and i don't know how many times a year you could get one

We are approved Mobile Food Vendors. The inspector said we were ok for beside the road selling, but the county has a whole nother bunch of rules. And the city, if you want to vend in the city, has another bunch. It makes you wonder how these immigrant restaurant owners ever get done.
The county said we had to get approval of the people that owned the property. You can't just set up on public land. Also restroom facilities had to be available either from us or the property owners had to make theirs available. Then we would have to be inspected by the county.
The city had similar regulations, but they also require special landscaping. This is if you are a permanent part of the landscape, I think. Otherwise you need to go for a special event permit. A one time charge. But you still must be checked out by the state and county. The county wants you to be checked out by the state and city, especially zoning.

What a bunch of catch 22s. But it can be done. Just go through the hoops, document it all. I'm sure I've missed steps, but at least I've made a determined effort.

I did an internet search for temporary food services or faclities and mobile food service operations and got a couple of good hits one a nice brochure from a county in Florida, one from Washington. Armed with the right words from that, I did a more extensive search of state of Washington regs etc. From what I was able to gather the licenses are granted county by county, but the requirements are quite similar across the nation. But as I said most of my hits came from either Florida or Washington for some reason.

Anyway check with your local county health department, finding the right inspector or contact person may save you a whole lot of time and hassle.

I have a similar post in the pellet open forum and have had a couple of hits, but nothing life changing yet.

I don't know about the serving from a tent with a grill. I'd contact the state. Go to MyFlorida.com They have the contacts listed that you need to talk to.
I see people selling seafood along side the road from tents and coolers sometimes, but I wonder if they have approval.
It sure seemed a lot more complicated than that to me.
Don't sell from the tent until you're sure that's ok. Are you sure you want to do that?
