Hello trying to get ideas on the best sausage to serve at a bbq shack. All info helpful.

It really depends on how much of an item you want the sausage to be.
Is it a fill in,or do you want it to steal the show?
Is this big sausage country?
You could buy some regular grocery store brands,i.e. Hillshire,Eckrich,etc and sample it out.
Maybe offer a 3-4 oz link with the combo platter.
If the crowd screams for it,find the best local sausage maker and buy from them.
There are great Tx and La sausage makers on line,or even at your local Sam's Club.
I can hook you up with fine makers from these areas,if you wish to make a statement.
