Here's an easy one for you all. We are doing a late Octoberfest and will be grilling a bunch of brats, knocks and polish sausages.(store bought).I want to tease them a bit with some smoked in the 08. Do I just go to temp? 155-160 with 2-3 oz of wood? Is it good to hit the grill after smoking to char them a bit?
