If you are going to do much sausage at all,, you will want a grinder and separate stuffer....

I have an LEM 5 lb. Vertical Stuffer, and it makes sausage stuffing much easier than using the grinder for stuffing. There is a cheaper version which looks identical to the LEM that is sold by Grizzly. The Grizzly has hard plastic gears, as opposed to the LEM having metal gears, but a friend of mine has the Grizzly and says it works great.

I have the smallest Cabela's stuffer, works great, and later you can get a motor and add if you wish.
