I've had a SM008 for years but didn't use it much until recently. I brought back a bunch of Salmon from Alaska this summer. After I got Salmon dialed in I started trying other things. Over the past several months, I've smoked everything from ribs to lamb meatloaf. Now I'm hooked and want to upgrade my smoker. I don't need the capacity of the AmeriQue (or the price tag). I noticed that most people are either going with the SM020/025 or the AmeriQue. Are the the SM045 and SM025 the same except for an extra shelf? I don't have plans to feed more than a small gather of up to a dozen people. Any input is welcome.

One question about my SM008 and internal temperature. It was about 25 degF outside. I had one probe in the meat and a second one hanging in the air above it for curiosity. With the smoker set at 225, the temp would rise to 225 but when the thermostat kicked off, it would drop below 200. Is this normal? What should I expect with a SM025?

I'm not Pags and I don't like lamb, but to each his own.I have a cs020 that I'm willing to share a little knowledge with others about. It is 11 inches from bottom shelve to top of smoker on the inside. The shelves are the same size as the other smokers that you were talking about. My comes to heat rather quickly and holds rather close range + or- 2*. When smoking bigger meats I will raise my cs020 up 25-35* towards the end of the cook. It will over shoot than under shoot by 12-15* them stablize very nicely 1-2* once again. Takes about 15 minutes to come up to temp when door is opened in 20* weather. I just love it.Your correct I have 2 shelves and next one up has 3 shelves. Hope this helps and any other questions. It has 300* setting like the other models you asked about.

Krash. I was funning about the one recipe rule(although I think it would be a great requirement after we gain a year's experience with our smokers), but I love lamb and would dearly like to see your lamb meatloaf recipe. Smokin keeps telling us to include recipes, so don't be shy.

I think it would be a great idea if everyone made a conscious effort to post their favorite smoke recipe under "Favorite Recipes". I don't expect the comp cooks to really share their favorite, but from them #5 or #6 might be as good as some of us could do. Sure would be fun to share and experiment.

My wife loves lamb and Alton Brown has a really good Gyro meatloaf recipe that we make. One time the food processor died which was essestial to puree the lamb. I had to improvise and make a more traditional meatloaf. I remembered seeing the meatloaf recipe in "Still Smokin'" and thought I'd give smoking it a try. We were both surprised how good it was.

What are you wanting to accomplish. Replace your old one completely or add to it. Really as they're they same "style" smoke, just different capacity, maybe knowing what you're wanting to do with it are helpful.

What kind of Q and in what kind of quantities.

Replacing or keeping your smokette?
My younger brother is interested in an electric smoker so he can get his feet wet with my old smokette. I really like the new features including the probe and extra grill width for full slabs. Cabelas web site says they have both the 020 and 025. Thought I'd call to see if our local store does. I like the fact that they are the same style and should require very little to adapt. As far as capacity goes, I've yet to exceed that of my smokette. I've only smoked for more than my wife and I just once. The ability to easily accomodate a few full slabs, whole brisket or PB would be nice.
Saw an 020 at Cabela's today. I'm impressed with the new wood box and heating element. The salesperson there was very helpful and actually owns an 008 like me. He spoke very highly of the Cookshack products and customer service. Looks like I'm getting an 025 for Valentine's day Smiler They don't stock the 025 but will order one for me.
