Not sure why it went that high that quickly. Might want to check that it's plugged in all the way. The probe will register HI when it hits 200*.

For ribs you don't really need a probe. Read Smokin's Ribs 101 in the rib section. Use a toothpick to check for doneness, when it slides through with little to no resistance, they are done. Works every time.
