I have been monitoring my internal oven temperature a bit over the last couple of days.

I am a brand new Cookshack owner (009), and my first load was chicken halves which took way longer than expected. That is why I started to check the oven temps.

With an empty oven and the thermostat set at 225, I easily attained the 225 temperature range. I observed some temp swings +/- 20 to 30 degrees. No concern about the fluctuations necessary.

Today I put in my second load (7 lbs. of ribs) and set the therm to 225. The last three hours I averaged an oven temperature of 187 degrees. It never hit 200+ degrees once. After 4 hours of smoking, my ribs were not even nearly done (little to no meat recession.)

I have bumped up the therm to 250 and finally achieved some temps over 200. Will record my results until the ribs are done.

I am not in any hurry as I have done lots of smoke cooking and know it is an endeavor best enjoyed at a leisurely pace.

Just trying to get a feel for my Smokette's operating behavior. . .
