I've been lurking aroud the forums for the last week or so and finally went out and purchased a smokette from a local dealer yesterday... can't wait to get it seasoned and smoke up my first brisket! Living here in Chicago (go Bears!), we get lots of weather...not all of it predictable. After reading the owners manual this has raised some concerns: The manual suggests storing the unit indoors when not in use. Is this really needed or would it be o.k. to keep it outside on a cart with a cover year round (it might get buried in snow and would certainly get rained on from time to time). Also, what to do if it starts raining in the middle of a 10 hour session... keep going ? Turn it off? Stand by with a fire extinguisher and hope for the best? I know this must have happened to somebody along the way. Any advice would be greatly appreciated. Great forum ..thanks.

After reading most of the post's in this forum while waiting for my smokette to arrive, i gather that leaving it outside has no effect on the unit what so ever. The walls are insulated enough to keep the heat in, and the outside temps out. You will notice that when you season (if you haven't already) that you can touch the outside of the unit without any problems. even @ 225 degrees internally, the outside stays nice and cool.. I think it has like 900 or 1300 degree insulation in there. As long as it's covered (when not it use) it will be fine. I've used mine for a pork butt a few weeks ago (18hrs) and the temps were in the 30's and a bit lower at night, without any problems. I'm sure stuart will jump in here and give you some specifics on the insulation, or you might run a forum search on insulation and read some of the old posts. Also, it is a good idea to keep the unit out of the direct rain, I have mine just under the eve of my house.. here's a quote fom Stuart a wealth of knowledge, between him and Smokie Okie, you can learn alot, not to mention from all the users and other great folks on the forum..

You can use the Smokette outside in the winter. I have used mine when it was in the teens and snowing. Didn't affect the cook time at all. The Smokette is insulated with 1000 degree insulation, so the heat stays inside.

You can use an extention cord with the Smokette as long as it is a heavy duty one. I recommend at 12 gauge wire and if it is a very long cord 10 gauge.

Yes, it rains while Smokin'

So, I took one of those sand stakes for umbrellas, put it in the ground. Now when it rains I take the big patio umbrella out, drop it into the stake and put it up. Keeps the rain out.

You could put something ABOVE the hole, but not over it. Don't restrict the vent hole, ever.
Thanks for the feedback. I'm ready to go regardless of weather. Smoked some salmon yesterday with outside temp 30 degrees. No problem..came out great. By the way..i used some of Rick Bayless' Frontera grill adobo three chile and spice rub and really liked the effect.If you can get it in your area might be worth a try...
Another fine product from Oklahoma....Bayless is from Oklahoma. By the way, his family ran a BBQ business here in OKC and that's where he got his chef's training... His mother is a good friend to Smokin' and the Smokin' Family.

His Mother tells me stories about receiving shipments of 10,000lbs of ribs... 2 1/2 in down..then we start talking Q, his mother still knows the business.
