I'm wanting to make some beef snack sticks but I'm not sure whether I should use my smoker (CS55) or dehydrator. My main concern is whether the dehyrdator can take the beef sticks to a safe temperature level. My dehydrator has a max temp of 155. I've been making jerky and prefer the results I get from the dehydrator over the smoker and therfore I am leaning towards using the dehydrator. Any comments or suggestions would be greatly appreciated. Thanks

I have made them in my Cabela's unit with no problems. Just use the correct amounts of cure, I think the lasdt ones I did I put in the night before bed and did them at the max temp for 11 hours.

Little side note, if it is cold where you live do not put the dehydrator in the room with the thermostat in it, or even close to that room. That thing pumping out 155 deg. warms up the room and keeps the heat form coming on.
shtrdave- Thanks for your feedback. I'm glad to hear that the dehydrator will work fine for making snack sticks.

I have the Cabela's dehydrator as well, it's a nice unit. I know what you mean about the heat put out by the unit. I've got mine in my finished basement which this time of year stays rather chilly, that is until I run the dehydrator for several hours. Thanks again.

I actually use both the smoker and the dehydrator for jerky.
I use mesquite for 3 hours at 170 deg in my FEC.
Puts a wonderful smoke flavor on and gets them into the food safe temp with no problem.
Then I finish off as necessary in the Excalibur.

Great flavor and great control over moisture and texture.

Just a thought.
