on the chicken if you have an fec run the temp to at least 375 that will cure the skin problem. the dry rib problem can be cured by taking them out with about 1 hour left to go. get aluminum foil long enough to wrap them in. put the rib on that and hit it with maple syrup and honey wrap it up and put it back in for 45 mins. after that unwrap for 15 min to bark it up.
one other idea on the chicken is to marinade it over nite. some like newmans own but i got good results using just plain old olive oil (not extra virgin) and then using rub the next morning

oh man,
ok here is what we did with baby backs and it got us 8th at callahan contest and that was 48 hours of straight rain.
what i did was this
1- used a mix of 75% oak, 12.5% sugar maple and 12.5% cherry pellets.
2- i smoked the babies for 4 hours at between 145-165f.
3- took them off wrapped in foil and did the maple and honey thing i listed above and put into the reefer overnite
4- after peg was done with her chicken (heat setting 450f) i unwrapped the babies and put them in for 30 mins.
5- took them out and just put a sheet of foil over them for about another 20 mins
6- cut them up and put in comp box
