I've been wanting to make some deer summer sausage with my Cookshack. Any suggestions on good kits to use (Cabela's, Hi-Mountain, LEM, etc.) or would it be better to buy fibrous casings and use a home recipe? I've used the LEM Jerky and the LEM Andouille Sausage seasonings and they were good, haven't tried anyone's summer sausage stuff yet.

Might want to try Hobarts or Exclibur supply. I have not made any summer sauage yet from Hobarts but have made many versions of jerky from their product line and have not had anything bad yet. This link has a bunch of sausage mixes that are really good, especially the brats (like W 1503).

I have done the recipie from the master book from Rytek Kutas and that is awesome. Found at Cabelas:
