I'm getting a Smokette for my husband and the Black version doesn't come with the temperature probe. What do you suggest to get, or should I really spend the extra $150 for stainless + probe?
Get the stainless. The probe is nice to have and the outside is also easier to clean based on other powder coated non Cookshack units I've had in the past. Stainless also looks meaner.
Pags is right; the stainless will probably be easier to maintain in the long run. Either way you go you'll want to get an independent temperature probe like the Maverick ET-7.
Pags, does the Elite cut off when using the probe after the meat reaches the set temp?
I have had a stainless for many years, it lives on the back porch uncovered, it is easy to clean and keep clean, when I bought it I comtemplated the same question and spent the extra $ at the time, I have not regretted it. I would do it again... hope this help you in your decision...

Just curious how the temp probe works. I understood that there was no hold function. Does the temp probe just monitor the temp of the meat? Can you set a temp for the probe to shut down the unit when meat comes to a set temp?
I had the same decision and went with the stainless plus I really wanted a temperature probe. I don't regret it but I did buy a Polder dual probe as well. I like to have an additional probe(s) in case I am smoking more than one piece of meat or for large cuts I like to probe two areas.
You could probably buy the black version with a cover and a Polder or Maverick dual probe and still save money and it will smoke just as well.

It just monitors the meat temp. It does not shut down the unit.
