early morning calls -- can you smoke .......(fill in the blank).....

Todays call was for fish for the annual banquet for our fire department in a few weeks. Our stock reply is if you fillet it and clean it good we will smoke it. I guess we are getting pretty good with fish. Now to make room in the fridge for the brining process.

During hunting season -- we get requests for ducks and geese also -- same reply -- you clean it we will smoke it. LOL

I'm planning on doing a small turkey this week (my first turkey) chickens have turned out fantastic so looking forward to this. And after that is lamb.
