I had 2 items on my to-do list this weekend. First paint the back porch and second a Labor Day BBQ. Sounds like a job for my new model 55. Started out on Saturday and smoked some salmon and beef jerky. On Sunday I loaded the 55 with some Country Ribs and a pan of baked beans.( I used some Buckboard Bacon I made earlier in the week in the beans) I gave the porch the first coat of paint while 55 was hard at work cooking up some Q. On Monday I loaded the smoker with a few racks of Spare Ribs and a rack of Beef Ribs and then proceeded to give the porch a second coat of paint while that 55 just kept doing its thing.
Well I finished the porch and still had time to grill a few pieces of chicken, shower and grab a beer and sit back in the the shade and wait for the guest to arrive. They were amazed to find a table full of smoked salmon, beef jerky, country ribs, spare ribs, beef ribs, baked beans(made with my buckboard bacon) and a freshly painted porch. If they only new how easy it was.
All the food was great and has made this newbie a believer. I would not have wanted to try this using and offset smoker. The cookshack is about as close to "set and forget" as it gets.
