Well, I need to first and foremost thank a lot of you "Ol Timers" who have pushed my decision to bring authentic Western Carolina BBQ to Cleveland Ohio. In a job market that is ever changing I decided to get started in something that I love, and have a desire to share with customers...BBQ...the one universal language of love! The pointers and advice that is provided here reminds me of sitting in an old barbershop listening to the old men talk about whatever topic with experience and expertise. I am starting up a SMALL catering business built around the FE100 (which should arrive in 6 more days) and a small core group of customers that I have built on in the area. Thanks so much for helping me make the decision to spend life with my love of Que~look forward to getting to know you all!

Rob, After the first job is completed, the nerves settle down, but the excitement won't.

Nothing is more gratifing than getting the compliments after you've "nailed it".

Don't be afraid to charge what your product is worth, and keep good notes for future reference.

Thank you very much, ideas and guides have been a HUGE help. I love the community here, and will be using a lot of ideas that others who have been at this a while. I feel as though I know many in the forum already due to reading such detailed postes about experiences.
I am originally from Mt. Airy, I will be heading down that way actually in about a month, sounds like a great side road trip to make. Again, thanks to the members on this board, it is good to know that there are shoulders (no pun intended) out there to lean on besides my accountant.

Let us know what we can do to help you get started, I have some forms, (catering contract, Recipe converter, yield card, cost card, etc) they are all is excel and have helped me out in my catering business as well as when consulting with my clients.
(not trying to sell anything, just being a good neighbor here in Cookshack land, lol)
good luck with your new found hobby and i say that to say this its a hobby for free and for fun and if someone wants to pay you to have fun thats a biproduct.Once you fire up the smoker all that being nervious will leave also if you pre cook at home that may ease up on the nerves good luck to ya'll and remember its for free and for fun
