Turkey's in the brine

Hey everyone,well here I go again. I used smokin'okies brine 101 recipe..with one or two small changes.With both birds very close in weight one at 11.5lbs and the other 11.96lbs but,this seems to be an even fight.Both birds have over come handicaps that most could only dream of. Bird who I will call #1 has lost a leg I am assuming to get this far this bird has shown that he is by far very worthy to be in this cookers corner.Bird #2 has lost a right wing. The talk around this town is that he is not to be under estimated..He may not be able to throw a hook..but he can kick! I am hoping that as they enjoy the brine spa..they will gain the nessesary flavour and tenderness to knock me out.Rob
