After doing an extensive forum search over which thermometers to purchase I wound up buying two Polders and one Taylor true-temp. Both Polder probes failed after 2 uses each. The Taylor probe is still working fine. I've taken great care not to damage the probes (go through the smoke hole, not the door, don't kink, don't submerge in water etc)but they still failed, meaning they read about 100 degrees too high. Since the two brands of probes are interchangeble, I've ordered new probes from Taylor. Replacement probes for the Taylor are hard to find online but Polder replacements are common. Hmmm, is there a message there?
