Okay, don't laugh at the subject...what I mean is: I'd really like to volunteer my time working in a BBQ restaurant. I'm currently in the Culinary Management program at my local college and will graduate in 2004 - a long time away for a 43 year old. I've been toying with the idea of my own BBQ restaurant for a number of years but didn't know how to start, so that's why I enrolled into the CM program. Now, I would really like to spend some time in a true blue BBQ kitchen. I know this is risky to advert on the web, but if there are any serious restaurant owners that would like free help please e-mail me and we can discuss details. As an aside, I do own a Cookshack 055 and am having a lot of fun using it.

Here's a round-a-bout answer to your question. The New England Barbecue Society offers a "Mentoring Program" to those interested in learning the "how-to's" for competing in regional events. Here's a link for NEBS: mailto:nebs@netrelief.com

Perhaps they can put you in touch with someone who would take you on as a trainee.

Thanks to both of your suggestions. I will check out the New England BBQ society. Also, I've been directed to the Canadian BBQ website (www.canbbq.com). It's small, but I've gotten some really good suggestions and advice from there too. Things are looking up, and I'm sure I'll be getting a good education on this, this summer - at the very least, I may just start with a trailer and a smoker and do some catering. See if my town accepts this awesome food group :-)
