If nothing else, it catches a lot of drippings that would normally go into your pan to clean out. Try putting apple juice in the pan as we'll to make a flavored steam in the cooker.
I have tried a water pan a couple of times; was not a big fan of it. I tried a technique I saw Butcher BBQ use on TV; used a painter's roller pan for a water pan. The slanted pan works well with the slope in the cooker. But of course David may have been giving us all a big head fake when he used that pan on TV..... :-)
