West Virginia BBQ - What Do They Do?

Our church recently hired a new pastor and we're on the West Coast. He and his wife are originally from West Virginia and we were thinking of having them over for dinner. I thought that I'd use the Amerique to smoke up some tasty home cooking, but I'm not sure what the preferred BBQ of that region is. Any help would be appreciated.
