Hi.
I am good with the name now. It is one that we can have some fun with and it certainly is distinctive. I AM excited!
We have all the equipment now. Yesterday, the sinks and hotwell and all that finally arrived. My husband is finishing up a remodeling job next week and will start on the trailer full time then. Pictures will follow soon after that!
I tried chicken wings in the FEC last night. Not bad, but the temperatures started dropping outside, down to 30 and below, and I pulled them a tad early. They could have used just a bit more time to crisp up a bit more.
I also did a baked potato, just for an experiment, and that was excellent!
I did potatoes diced with onion in foil packs too. One package got italian dressing on the potatoes, which turned out really good. It gave them a German styled potato salad taste.
I also remembered to remove the unused racks in the smoker this time!
We did find out that our Maverick smoker thermometer is not working right. I placed a regular oven thermometer in the smoker at the same level as the Maverick and found that the readings were not matching. I could look in with a flashlight through the vent to read the oven thermometer and I trust that thermometer. So I am thinking that I need to do one more test before I send the thing back.
So, all in all, things are moving along and it really is exciting.

I have two 8 LB. butts cooking right now, they have been in since last night. The family is coming today. The butts seem to be on schedule. I smoked them for a couple of hours, moved them up to 180 over night and will crank them up a notch for the rest of the time. Not sure where I read this proceedure, but I am giving it a go.

I have two 8 LB. butts cooking right now, they have been in since last night. The family is coming today. The butts seem to be on schedule. I smoked them for a couple of hours, moved them up to 180 over night and will crank them up a notch for the rest of the time. Not sure where I read this proceedure, but I am giving it a go.

Take your Maverick thermo and test it in boiling water, that will be the most accurate way to tell how close it is. Also there may be a way to calibrate it, instead of having to send it back.

Hi Tom,
We cooked two butts last night and used the Maverick. We only used it for internal temperatures. It was reading accurately on that score. I second guessed it with a digital thermometer. It is the smoker temp. that it has a problem with. I will try testing it in the water. Thank you. The way we cooked the butts the FEC temp. didn't matter. I went with 2 hours smoke time, overnight on the next setting up, then we bumped it up one more click until it reached just around 200* internal. I made a rub without any sugar in it, just spices. The bark was delicious and the color was beautiful. But, the taste and texture was inspiring! I had the whole family over for a party and a test run of all our sides. Idid good! I nailed the cole slaw, blew them away with the beans (no jokes please!) and the butts were perfect. It was a good day.
We will test the Maverick in the water, but I am wondering why it works internally but not externally?
