And I read the web site. One of the Cookshack owners said he seasoned the smoker with a small piece of cheap greasy meat (thus the one pound hunk of pork steak and a small pan of water).
I know it was to season the metal. I threw the pork steak away after I was done, before my first smoke.
And I was following the directions when it said not to operate in the rain. Of course, you could cover it!!!
In any case, my method (borrowed from Cookshack) worked just fine. The Smokette is now a meat smokin' machine!!!
