When is it best to pull pork? We are cooking 4 pork butts in SM0025. When they are finished cooking and resting, we will be taking them to an event which is four hours away traveling time. Is is best to pull the pork immediately after it is finished cooking and resting - or - should we pull the pork when we arrive at our destination hours later?

I'd have to agree with G Que

If you're going to travel with it it will travel much better FTCed than prepulled

The collagen will continue to breakdown as it travels, it will remain hot 6-8 hours and if the recipients see what you’ve brought them prior to pulling they will ooh and aah at the sight. (Extra points)
