Eagle66 on the Cookshack the amount of wood is critical. It is real easy to over do it. We do not judge by time we judge by amount sense the product only absorbs the wood flavor for about the first two hours. I recommend to new customers to start out with one 2 oz chunk of wood on the first cook and adjust up from there in small amounts if you would like a little heavier smoke.Once you get your preferred taste down you should have no problems.Of course as all ways if you have any questions at all give us a call here at Cookshack (800) 423-0698.
Well said electro tech. I have found that the large chunks take longer to burn then the small pieces. I have used the guide of two little pieces for short cooks, two large pieces for long cooks. It is verrrry easy to over smoke with these smokers and taste is something that is personally as far as how much smoke a person likes.
