Doing a brisket for my sons birthday, If I cut the 10 pounder in half before smoking does the cook time change to a 5 pound flat or figure on enough time for a 10 pounder? Going to inject one of them.
I think, by cutting it in half you'll have less of a satisfactory end result. Sound like you haven't cooked them a lot. We don't see a lot of success with people cooking 5 lb flats. Not much fat and they tend to dry out quickly.
